Margarita Chicken

Fire up the grill during your next fiesta.

  • 1/2 cup frozen non-alcoholic, sugar-free margarita mix, thawed
  • 3 Tbs. freshly squeezed lime juice
  • 1 clove garlic - crushed
  • 3 pounds broiler or fryer chicken, cut up, skin removed
  • Coarse salt


  1. Mix margarita mix, lime juice and garlic in a large zipper freezer plastic bag
  2. Add chicken to bag
  3. Seal and turn a few times to coat chicken
  4. Refrigerate, turning bag occasionally
  5. Marinate at least 1 hour, but no longer than 24 hours
  6. Remove chicken from bag and reserve marinade
  7. Place chicken on grill skin side up
  8. Brush with marinade and sprinkle with some salt
  9. Cover grill with lid and grill 5 to 6 inches from medium heat for 15 minutes
  10. Turn chicken, brush with remaining marinade and sprinkle with more salt
  11. Cover and grill 20 to 40 minutes longer until chicken tests done (juices run clear)
