Mint Ice Cream

A cool minty ice cream treat.

Yield: Serves 6


  • 4 egg yolks
  • 3 cups heavy cream
  • 1 tsp. mint extract
  • 2/3 cup Splenda
  • Ice cream maker


  1. Combine half of the cream and mint extract in a saucepan
  2. Bring to simmer
  3. Remove from heat and let stand for 30 minutes
  4. Mix in remaining cream
  5. Beat the egg yolks and Splenda until pale yellow
  6. Gradually beat in the cream mixture
  7. Return mixture to saucepan and stir over medium heat until it thickens
  8. Do not let the mixture boil
  9. Chill
  10. Once the mixture is cold, pour it into ice cream machine and freeze according to
    manufacturer's directions.
