Molasses Whipped Sweet Potatoes

A sweet side dish from Barack Obama's inaugural luncheon.

Molasses Whipped Sweet Potatoes Photo
Yield: 2 Quarts

Ingredients

  • 3 large sweet potatoes, about 3 pounds
  • 2 Tbsp. unsalted butter
  • 1 tsp. kosher salt
  • 1/4 cup orange juice
  • 1/2 Tbsp. of brown sugar
  • 1 Tbsp. of molasses
  • 1 tsp. of ground cumin
  • 2 Tbsp. maple syrup

Instructions

  1. Preheat the oven to 400° F.

  2. Place sweet potatoes on a baking sheet and roast until easily pierced with a fork, about 1 hour.

  3. Peel the skin off of the sweet potatoes while still hot. By hand or mixer smash potatoes until smooth and all large chunks are gone.

  4. Combine the potatoes, butter, salt, orange juice, brown sugar, ground cumin, molasses and maple syrup in a large bowl. Continue to mix all together until well combined. Adjust seasonings to taste.

Can be made one day ahead.

Absolutely awful! I spent two hours trying to save this dish. I left out the cumin and should have left out the orange juice, as well! Can't describe how bad it all tasted together and am still having to work to get the taste out of my mouth. Save yourself a couple of hours and stick with brown sugar and cinnamon.

These sweet potatoes are not the traditional sweet version despite the ingredients and should be called "Cumin Sweet Potaotes," as the cumin overpowers everything. I suggest no more than a quarter teaspoon unless you're really into cumin.
