Oatmeal Fruit Cookies

Made sweet with dates and apples. You'll never know they are sugar free!

Yield: Makes 40 cookies

Ingredients

  • 1 cup flour
  • 1 tsp baking soda
  • 1/2 tsp. cinnamon
  • 1 cup water
  • 1/2 cup raisins
  • 1/2 cup chopped pitted dates
  • 1/2 cup chopped, peeled apple
  • 1/2 cup butter
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • 3/4 cup chopped walnuts
  • 1 cup dry oatmeal

Instructions

  1. Sift or mix together flour, baking soda and cinnamon; set aside
  2. In 2 quart saucepan over medium high heat bring water, dates, apple and raisins to a boil
  3. Reduce heat to low; simmer 3 minutes. Remove from heat. Add shortening or butter; stir until melted
  4. Pour into large bowl; let cool so eggs will not break
  5. Add beaten eggs and vanilla
  6. Stir in dry ingredients, oats and nuts
  7. Cover and refrigerate at least two hours, or overnight
  8. Drop by heaping teaspoonfuls, 2 inches apart, on greased baking sheet
  9. Bake in 350 degree oven for 12 to 14 minutes
  10. Remove from baking sheet
  11. Cool on racks. Store in refrigerator in airtight container

It says 1 cup dry oatmeal down at the bottom!!!

I have a pet peeve about people that post recipes online and don't proof read what they post since others may try the recipe. What oatmeal cookies don't have oatmeal in the ingredients?

How much oats go in this? The ingredients don't mention oats but the directions do. Which one is correct?
