Orange Balsamic Chicken

Prepare to impress with this flavor-rich chicken.

Yield: Serves 4

Ingredients

  • 4- 4 oz. skinned, boned chicken breast halves
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 cup all-purpose flour
  • 1 tsp. margarine
  • 2/3 cup canned no-salt-added chicken broth
  • 1 1/2 tsp. cornstarch
  • 1/2 cup low-sugar orange marmalade
  • 1 1/2 Tbs. balsamic vinegar
  • Orange slices (optional)

Instructions

  1. Place chicken between two sheets of heavy-duty plastic wrap; flatten to 1/2-inch thickness, using a meat mallet or rolling pin
  2. Sprinkle with salt and pepper, then dredge in flour
  3. Melt margarine in a large nonstick skillet over medium-high heat
  4. Add chicken, and cook 8 to 10 minutes or until done, turning once
  5. Remove chicken from skillet; keep warm
  6. Meanwhile, combine broth and cornstarch then stir in marmalade
  7. Stir broth mixture into skillet and cook, stirring constantly, until mixture is thickened
  8. Stir in vinegar
  9. Reduce heat to medium
  10. Add chicken, turning to coat
  11. Cook 1 to 2 additional minutes or until thoroughly heated
  12. Garnish with orange slices, if desired

I tried the orange balsamic chicken and thought it was very good. The balsamic reduced down to a thick glaze for the chicken. I will definately keep this recipe in my file and make it again and again.
