Peachy Pork Stir Fry

This is one peachy-keen recipe.

  • 1 lb. lean boneless pork loin
  • 1/2 tsp. ground white pepper
  • 1/4 tsp. salt
  • 1/3 cup low-sugar apricot spread
  • 1/4 cup peach nectar
  • 1 Tbs. cornstarch
  • Cooking spray
  • 1 tsp. peeled, minced ginger
  • 3 cups sliced frozen peaches, thawed
  • 6 oz. fresh snow peas pods, trimmed


  1. Trim fat from pork
  2. Partially freeze pork
  3. Slice diagonally across grain into thin strips
  4. Sprinkle with pepper and salt, then set aside
  5. Combine apricot spread, peach nectar, and cornstarch in a small bowl
  6. Stir well, and set mixture aside
  7. Coat a large nonstick skillet or wok with cooking spray
  8. Place over medium-high heat until hot
  9. Add ginger and stir-fry 30 seconds
  10. Add sliced pork and cook over medium-high heat until hot
  11. Add ginger, then stir-fry 30 seconds
  12. Add sliced pork, then stir-fry 3 minutes
  13. Add reserved apricot mixture
  14. Cook 1 minute or until mixture is thickened
  15. Add peaches and snow peas and toss gently
  16. Cover and cook 1 minute or until thoroughly heated
