Raspberry Ice Cream

Fresh raspberries make this ice cream come alive.

Yield: Serves 10


  • 1 cup raspberries
  • 1 1/2 cups Splenda
  • 2 Tbs. lemon juice
  • 4 cups light cream
  • 1 tsp. vanilla extract
  • Ice cream maker


  1. In a 3-quart saucepan combine raspberries, Splenda and lemon juice
  2. Mash berries slightly and cook over medium heat, stirring occasionally, until the mixture comes to a boil
  3. Simmer 5 minutes
  4. Remove from heat and puree in a blender
  5. Cool the mixture
  6. Add cream and vanilla
  7. Freeze according to manufacturer's directions
