Roasted Pork Tenderloin with Pineapple Chipotle Sauce

Juicy tenderloin marinated in an exciting blend of flavors.

Ingredients

  • 2 cups pineapple juice
  • 1/2 cup white wine vinegar
  • 2 Tbs. chipotle chiles, finely chopped
  • 2 Tbs. lime juice
  • 2 Tbs. fresh oregano, chopped, or 2 teaspoons dried
  • Freshly ground black pepper, to taste
  • 2 tsp. kosher salt
  • 1 Tbs. coarsely ground black pepper
  • 2 Tbs. chili powåder
  • 24 oz. pork tenderloin
  • 1 tsp. olive oil

Instructions

  1. Combine first 3 ingredients in saucepan
  2. Simmer until mixture is thick enough to coat back of spoon (30 to 40 minutes) stirring often
  3. Remove from heat and add lime juice, oregano and pepper to taste
  4. Preheat oven to 400 degrees F
  5. In small bowl combine salt, pepper and chili powder
  6. Rub tenderloins with mixture
  7. Heat oil in saute pan until hot
  8. Brown tenderloins
  9. Transfer pan to oven and roast meat until internal temperature reaches 160 degrees F (about 12 minutes)
  10. Remove from oven, allow to rest for 5 minutes
  11. Carve and serve with sauce
