Russian Dressing

More flavor than most salad dressings.

Yield: Serves 4

Ingredients

  • 3 Tbs. orange juice
  • 3 Tbs. reduced-calorie mayonnaise
  • 2 Tbs. minced green bell pepper
  • 2 Tbs. minced red bell pepper
  • 2 Tbs. tomato paste
  • 2 Tbs. plain nonfat yogurt
  • 1 Tbs. drained prepared horseradish
  • 1 Tbs. grated onion
  • 1 tsp. Dijon mustard
  • 1/2 tsp. chili powder
  • 1/4 tsp. freshly ground pepper

Instructions

  1. In a jar with a tight-fitting lid, combine all the ingredients
  2. Cover and shake well
  3. Refrigerate, covered, 2-3 hours
  4. Shake again before serving
