Sausage Stuffed Chicken

A double take with sausage anc chicken.

  • 1 lb. pork sausage
  • 1/8 cup fresh parsley, chopped
  • 1 garlic clove, minced
  • 1/2 tsp. thyme
  • 1/2 tsp. salt
  • 1 egg, beaten
  • 1/2 tsp pepper
  • 1/2 tsp. sage
  • 4 chicken breasts, flattened


  1. Brown sausage in a large frying pan, breaking up with a fork
  2. When all the pink is gone and sausage is thoroughly cooked, remove from heat
  3. Drain excess fat from sausage meat
  4. Add remaining ingredients and mix well
  5. Place on flattened chicken breasts, roll up, and secure with a toothpick
  6. Bake at 425º F for 35-40 minutes
