Sugarless Cake with Pineapple

As good as a pineapple upside down cake, but better for you!

Yield: Serves 8-10

Ingredients

  • 1 c. raisins
  • 1/2 c. dates, chopped
  • 1/2 c. crushed pineapple (packed in juice)
  • 1 c. water
  • 1/4 lb. margarine
  • 1 1/2 c. flour
  • 1 tsp. soda
  • 1 tsp. vanilla
  • 2 eggs
  • 1/2 c. chopped nuts

Instructions

  1. Boil raisins, dates, pineapple and water for 3 minutes
  2. Add margarine and let cool
  3. Beat eggs and vanilla
  4. Add flour sifted with soda
  5. Add cooled fruit mixture and nuts, mixing well
  6. Pour into greased and floured 9 x 13 inch pan
  7. Bake in 350 degree oven approximately 25 minutes, or until a toothpick in center comes out clean
  8. Let cool completely before serving
  9. May frost with 8 ounce cream cheese mixed with 1/4 cup honey.

We needed a cake for a friend who doesn't use sugars or artificial sweeteners. Turns out he loves pineapple, and this was a hit. Very good for a nutritious snack anytime. I would suggest adding one or two more eggs for better loft in the cake.
