Sunshine Halibut

A tropical fish that will have your mind in the tropics.

Yield: Serves 4


  • 1/3 cup chopped onion
  • 1 garlic clove, minced
  • 2 Tbs. minced fresh parsley
  • 1/2 tsp. grated orange peel
  • 4- 4 oz. halibut steaks or fillets
  • 1/4 cup orange juice
  • 1 Tbs. lemon juice
  • 1/8 tsp. salt
  • 1/4 tsp. lemon-pepper seasoning
  • Cooking spray


  1. In a nonstick skillet coated with nonstick cooking spray, saute onion and garlic until tender
  2. Remove from the heat
  3. Stir in parsley and orange peel
  4. Place halibut in an 8-inch square baking dish coated with nonstick cooking spray
  5. Top with onion mixture
  6. Combine orange and lemon juices; pour over fish
  7. Sprinkle with salt and lemon-pepper
  8. Cover and bake at 400 degrees F for 15-20 minutes or until fish flakes easily with a fork
