Sweet and Sour Chicken

Exotic and Easy! Suitable for Diabetics too!

Yield:

Ingredients

  • 1/2 c. chopped green pepper
  • 1/2 c. chopped carrots
  • 1/2 c. chopped onion
  • 3/4 c. lite catsup
  • 2 TBS Rice Wine Vinegar
  • 2 TBS low sodium soy sauce
  • 1 c. pineapple juice
  • 1/4 c. brown sugar substitute
  • 1/2 tsp. garlic powder
  • 1/4 tsp. freshly ground pepper
  • Dash ground ginger
  • 1 c. pineapple chunks, drained

Instructions

  1. Heat margarine in large skillet until melted
  2. Add green pepper, carrots and onion
  3. Cook and stir 5 minutes over low heat until onion is tender
  4. Add catsup, pineapple juice, vinegar, soy sauce, sugar substitute, garlic powder, pepper and ginger
  5. Cook, stirring, until it boils
  6. Add pineapple chunks
  7. Arrange skinned chicken parts (about 3 lbs.) in 9"x13" pan
  8. Pour sauce over all
  9. Cover tightly with foil
  10. Bake 45 minutes in 400 degree oven
  11. Uncover and bake 30 minutes or until done
  12. Serve with cooked brown rice
  13. Good recipe for those on a no salt, no sugar, low cholesterol diet
  14. May substitue shrimp or fish, by reducing cooking time to 20 minutes
