Tuna Salad

The perfect light lunch for a hot summer day.

Yield: Serves 4 (1/2 cup serving)

Ingredients

  • 1 (6 1/2 oz.) can water packed tuna, drained
  • 2 hard cooked egg whites, chopped
  • 1/4 c. chopped celery
  • 2 TBS reduced calorie mayonnaise
  • 2 TBS honey mustard
  • Chopped dill pickles, red onion, lettuce leaves; optional

Instructions

  1. Combine all ingredients except lettuce leaves, pickles and red onion.
  2. Refrigerate until ready to serve.
  3. Serve on lettuce leaves and sprinkle with pickle and red onion if desired.
  4. For a professional touch, add chopped dill pickles and red onion
