Billions Needed to Improve Child Nutrition

More than 17 million children live in households that sometimes skip meals in order to make ends meet. One third of U.S. children are obese or on the road to becoming so. U.S. Agriculture Secretary Tom Vilsack called on lawmakers to appropriate one billion dollars a year more into programs aimed at ending the twin scourges of childhood obesity and lack of nutrition. One of those programs is the Child Nutrition Bill, on the agenda for re-authorization this year.

Walnut Week: Google Chef Charlie Ayers Talks Healthy Cooking

All this week, I’m dedicating my blogs to walnuts. If you’ve missed the content so far, be sure to catch up. You can find out what fitness guru Petra Kolber thinks you should do to stay energized this summer, and read about the latest research on the health benefits of walnuts.

This interview is with chef Charlie Ayers, former chef at Google, author of the book “Food 2.0” and member of the California Walnuts Chefs Council, a group working to make restaurant meals healthy and delicious at the same time. 1. As a restaurant chef, what is essential for creating healthier menu options? Whether it is swapping out butter for a healthier oil, or lower fat dairy, etc., how do you keep high-taste intact while still offering healthful options?

It is important to give your guests compelling flavor profiles, so that they are satisfied and not missing the added fats that are normally associated with restaurant foods. We tend to use a lot of ingredients that are versatile and can be either applied to Latin American or Asian cuisines. We make all of our own dressings; our ketchup is made in-house with no high fructose corn syrup, and instead use an organic brown sugar in small amounts as a sweetener. I try not to use added fats when working with product that already has a naturally high fat content, and I try and bring out the flavors of the foods with the combination of using fruit and vegetable juices instead of adding additional fats. Cool Low-Calorie Family Treats for Summer

Summer time is here in the Northern Hemisphere, and at least in my area, that means hot and humid weather. Spending any length of time outside almost immediately puts me into the mood for Popsicles, ice cream and other frozen treats.

But those treats can wreck havoc on your diet. After all, who wants to run an hour and then negate the caloric burn with a bowl of ice cream that could top more than 750 calories? This week I’m dedicating my blog posts to walnuts. You’ll learn about their health benefits, why top chefs love to use them in cooking, and why fitness experts love to suggest them as healthy snacks.

The Dukan Diet: A Fad Diet Followed by Celebrities

The ever-changing world of diets is never boring. Recently, The Dukan Diet, a restrictive fad diet has been attracting attention among celebrities and non-celebs eager to shed pounds quickly, but without ingesting any heart-racing diet pills or elixirs made of cayenne pepper and maple syrup.

Rumored to have followed The Dukan Diet are Gisele Bunchen and Jennifer Lopez following their pregnancies.

So what is this fad diet that started in France all about?

The Dukan Diet was created by Dr. Pierre Dukan about 10 years ago. It is based on a strict diet plan that was initially designed for those who are obese. But the craze has caught on to those just wanting to drop five, 10 or 15 pounds, not 50 or 75 pounds.

It is wildly popular all over Europe and is now spreading to the U.S.

UN Encourages a Vegan Diet

It may be that vegetarians and vegans are finally having their day in the limelight:

“A global shift towards a vegan diet is vital to save the world from hunger, fuel poverty and the worst impacts of climate change,” says a just-released report issued by the UN.

As the global population surges towards a predicted 9.1 billion people by 2050, western tastes for diets rich in meat and dairy products are unsustainable, says the report from United Nations Environment Programme’s (UNEP) international panel of sustainable resource management.

Make Small Changes to Improve Your Health

Healthy eating should not make you stressed out. Making small changes to move toward a more nutritious eating and snacking plan can help by leaps and bounds in the long run, because you repeat these changes over and again. My interview with Fox 5 DC gave great pointers on tips you can use to start living healthier.

Americans are notorious for drinking their calories. Replace your high-calorie beverages with drinks that don’t use up your calorie budget. Fruit2O, the company I’m working with to inspire people to make a commitment to small changes, has a drink with no calories, but it is fruit-flavored (their new Essentials line has added vitamins and minerals too). Another idea is to mix sparkling water with 1/2 cup of 100% juice for a refreshing, low calorie beverage.

James Loses 160 Pounds Before His 21st Birthday!

While he is only 20 years old, James Rice has experienced a lifetime’s worth of emotions. When he graduated from high school, he was nearly 370 pounds. But in less than two years, James has managed to lose about 160 pounds, now weighing 210 pounds.

While his peers were graduating from high school and thinking about what to do with the rest of their lives, James was thinking about how he was going to survive at the dangerous weight that he was hovering at.

“I just said ‘enough is enough,’ I need to lose weight or I am going to die,” says James. “I slowly cut down on my eating, so my stomach started to get used to eating smaller portions.”

Al Roker is probably the most famous meteorologists in the U.S. He has been a part of the MSNBC Today Show family since 1996 and with the NBC family since 1978 when he was part of a local station in Cleveland.

Having watched Al Roker over the years, he has certainly made quite a drastic change in his appearance with his substantial weight loss. Having tried and failed at numerous diets to lose weight, which at 5’5” and 320 pounds was a huge health risk, Roker decided to undergo gastric bypass surgery in 2002. Through the weight loss surgery, which essentially reduces your stomach to the size of an egg, he netted out with nearly a 100 pound weight loss. Like many celebrities, he was featured on the cover of People magazine, showcasing his weight loss story.
