Yield: Makes 12 muffins. Serving size: 1 muffin.

Ingredients

  • 2 ¼ cups white whole-wheat flour
  • 2 tsp baking powder
  • 1 tsp apple pie spice
  • ¾ cup brown sugar
  • ¾ cup egg whites
  • ½ cup vegetable oil
  • 1 cup skim milk
  • 1 cup diced apples

Instructions

  1. Preheat oven to 400 F. Lightly spray nonstick muffin pan with nonstick spray and line with paper muffin cups
  2. Combine dry ingredients in a medium-sized mixing bowl. Add wet ingredients and apples and mix well
  3. Fill muffin cups ¾ full with batter
  4. Bake until done, about 25 minutes. Test with a toothpick - it should come out clean when muffins are done

There is an asterik placed after the first listed ingredient: white whole wheat flour. I don't know what white whole whear flour is. Is it one or the other? Could this be a combination of the two flours? If it's a combination of the two flours...how much of each should be used?
