Apricot Souffles

An easy apricot souffle low in carbs.

Yield: Serves 4


  • 3 eggs, separated
  • 1/2 tsp. lemon zest
  • 1/8 cup apricot all fruit jam
  • Top with slice almonds, if desired


  1. Preheat oven to 350º F
  2. Grease four individual souffle cups
  3. Combine egg yolks with lemon zest and apricot jam and mix well
  4. In a separate bowl, beat egg whites until soft peaks form
  5. Fold egg whites into yolk mixture
  6. Pour into prepared cups and bake for 10-15 minutes
  7. Dust with cinnamon and serve
