Baked Tomato

Makes a great side dish to grilled meats or fish!

Exchange for 1 vegetable exchange
Yield: Makes 1 serving


  • 1 med. sized tomato
  • Other seasonings to taste
  • 1/2 tsp. chopped parsley
  • Salt & pepper
  • 1/2 tsp. chopped onion
  • 1/2 tsp. sage or chives


  1. Wash tomato and cut out stem end
  2. Place in small baking dish with a little water in the bottom, about 1/2 inch
  3. Sprinkle with seasonings of choice. Bake in a moderate oven (350 degrees) until tomato is tender but not so soft it will fall apart, about 15 to 20 minutes
