Blackened Chicken Salad

A salad packed with flavor.

  • 2 Tbs. each soy sauce and vinegar
  • Cooked, cubed chicken
  • 6 slices cucumber
  • 1/4 cup chopped tomato
  • bacon, cooked, cooled and crumbled
  • 4 Tbs. balsamic vinegar mixed with 6 Tbs. olive oil, divided
  • Romaine lettuce


  1. Combine soy sauce and vinegar
  2. Pour into skillet
  3. Add chicken
  4. Heat on high until chicken chars a bit
  5. Mix with salad and remaining ingredients
  6. Drizzle vinegar and oil over salad
