Lemon Baked Fish

A simple baked fish recipe infused with lemon

  • 1 lb. haddock or flounder fillets, fresh or frozen
  • 1 Tbs. butter or margarine
  • 4 tsp. lemon juice
  • 1 tsp. grated lemon rind
  • 1/8 tsp. salt
  • Dash of pepper
  • 1/8 tsp. rosemary


  1. If frozen, thaw the fish overnight in the refrigerator
  2. Preheat oven to 350 degrees F
  3. Place lemon rind in a bowl
  4. Cut the lemon and squeeze
  5. Measure 4 tsp. juice and place in a bowl
  6. Measure butter, salt, pepper and rosemary and add to bowl
  7. Microwave or place in oven until butter is melted
  8. Mix well
  9. Divide the fish into 6 servings and place in a single layer in a baking dish
  10. Pour the butter seasoning mixture evenly over the fish
  11. Bake for 25 minutes or until the fish flakes easily
