Red Potato Salad

This colorful recipe is healthier than its potato salad rivals.

Yield: Serves 8

Ingredients

  • 2 lbs. medium-size red potatoes, unpeeled
  • 1/3 cup thinly sliced celery
  • 1/3 cup finely chopped onion
  • 1/3 cup grated carrot
  • 1/3 cup finally chopped green or red bell pepper
  • 1/3 cup reduced-fat mayonnaise
  • 1/3 cup nonfat sour cream
  • 2 Tbs. sweet pickle relish
  • 2 Tbs. spicy mustard
  • 1/4 tsp. ground black pepper
  • Paprika (optional)

Instructions

  1. Clean the potatoes well
  2. Cut into 1/4-inch chunks
  3. Boil until tender about 10 minutes or until tender
  4. Rinse with cool water and drain
  5. Place the potatoes in a large bowl
  6. Add the celery, onion, carrot, and green pepper
  7. Toss gently to mix
  8. Combine remaining ingredients in a small bowl, and stir to mix well
  9. Add the dressing to the potato mixture, and toss gently to mix
  10. Cover the salad and chill for at least 2 hours before serving
  11. Sprinkle with paprika if desired
