Stuffed Green Peppers

Meat and cheese overflow from these peppers.

Yield: Serves 4

Ingredients

  • 2 large green peppers
  • 1 lb. ground beef
  • 1- 7.5 oz. canned tomatoes, diced
  • 1 Tbs. Worcestershire sauce
  • 1/2 tsp. dried oregano
  • shredded cheddar cheese

Instructions

  1. Halve peppers lengthwise, removing stem ends, seeds and membranes
  2. Immerse in boiling water for 3 minutes
  3. Invert on paper towels and drain well
  4. In a large skillet cook meat until brown
  5. Drain off fat (remove and pat with paper towels)
  6. Return meat to skillet and stir in undrained tomatoes, Worcestershire sauce, oregano, salt and pepper to taste
  7. Bring to a boil
  8. Reduce heat and simmer for 15 minutes
  9. Stir in half of the cheese
  10. Fill peppers with meat mixture
  11. Place in 2 quart baking dish
  12. Bake at 375º F for 15 minutes
  13. Sprinkle with remaining cheese
  14. Let stand two minutes
