Bacon and Chicken Rolls

A meaty combination rolled together.

Nutrition Facts: Carbohydrates 1.8g
Yield: Serves 4

Ingredients

  • 8 slices bacon, cooked and crumbled
  • 1/4 cup Parmesan cheese
  • 2 Tbs. fresh parsley
  • 1/2 tsp. dried oregano
  • 1 lb. boneless chicken
  • 2 Tbs. olive oil
  • salt
  • 2 c chicken broth
  • 1/2 cup diced tomato

Instructions

  1. Mix bacon, Parmesan cheese, and herbs
  2. Flatten chicken and fill with half of the bacon mix
  3. Roll up and secure with a toothpick
  4. In skillet, heat oil
  5. Add chicken and salt and cook until golden brown
  6. Remove
  7. Add broth and tomatoes and heat to boiling
  8. Add remaining bacon mix
  9. Reduce heat and simmer on low for 5 minutes
  10. Return chicken roll, heat and serve

Where's the rest of the nutrition facts? My husband is counting calories...I want to serve him a meal that fits his diet needs but I'm having trouble doing that with a lot of recipes not showing their calories.

i liked it but i used turkey bacon basil and garli can added a little corn starch to the broth to make it a light gravey and served over whole grain pasta very good
