Thai Chicken Stir Fry

Stir fry with a Thai zing.

Yield: Serves 4


  • 1/2 lemon rind, sliced
  • 2 tsp. ground ginger
  • 1 garlic clove, chopped
  • 4 boneless chicken breasts, cut into bite-sized pieces
  • 1/2 red bell pepper, seeded and sliced
  • 1 medium carrot, cut into match sticks
  • 2 Tbs. oyster sauce
  • Salt and pepper
  • 4 Tbs. fresh cilantro
  • Cooking spray


  1. Spray skillet with cooking spray
  2. Stir fry lemon rind with garlic and ginger until brown
  3. Add chicken and stir fry for a few minutes
  4. Add vegetables and stir-fry until chicken is cooked and vegetables are almost cooked
  5. Stir in oyster sauce and season to taste
  6. Stir-fry one more minute
  7. Garnish with cilantro
