Tuscan Chicken Casserole

A classic casserole for the whole family.

  • 4 skinless, boneless chicken breasts
  • 1/4 cup chopped onion
  • 1 red bell pepper, seeded, sliced
  • 1 crushed garlic clove
  • 1 cup pureed tomatoes
  • 2/3 cup dry white wine
  • 1 tsp. dried oregano
  • 1/2 cup Panko breadcrumbs
  • Shredded cheese
  • Salt and pepper to taste
  • Cooking spray


  1. Spray skillet with cooking spray
  2. Cook the chicken until golden brown
  3. Remove
  4. Add onions and bell peppers to the pan and saute until softened but not brown
  5. Stir in the garlic
  6. Add chicken, tomatoes, wine and oregano
  7. Bring to a boil, then cover the skillet
  8. Lower the heat and simmer, stirring occasionally for 30-35 minutes
  9. Sprinkle with Panko and cheese
  10. Cook under broiler until golden brown (use oven safe skillet or transfer to casserole dish)
  11. Serve with small salad
