Turkey Stuffing Loaf

Nothing tastes like comfort more than Turkey and the trimmings!

Nutritive Note: Serve size + 1/4 loaf. 330 calories; 33 g. carbohydrates; 27 g. protein; 594 mg. sodium; 201 mg. cholesterol
Yield: Serves 4

Ingredients

  • 4 tsp. canola oil
  • 2 sm. apples, pared & diced
  • 1/2 c. each shredded carrot, diced onion, celery, green bell pepper
  • 13 oz. ground turkey
  • 4 slices bread, cubed (may also use crumbled cornbread)
  • 1/2 c. plain low fat yogurt
  • 2 eggs, beaten
  • 1/4 tsp. each poultry seasoning & salt

Instructions

  1. Preheat oven to 375 degrees.
  2. In non-stick skillet, heat oil until hot
  3. Add apples and vegetables and saute, stirring constantly until apples are soft
  4. Remove from heat and stir in remaining ingredients
  5. Spray a 9 x 5 x 3 inch loaf pan with non-stick spray, and transfer turkey mixture to pan
  6. Bake until set, 35-40 minutes
  7. Remove from oven, let stand 5 minutes
  8. Invert on serving plate and slice
  9. May also cook in microwave about 15 minutes
  10. For a professional touch, serve with cranberry relish

It was very good, I didn't have any yogurt so I used sour cream instead. Lovely mild flavors blend well together and I plan to serve with cranberry sauce. Be sure to dice apples small, as it takes awhile to soften.
