Weight Watchers Core Banana Bread

A weight loss surgery patient prepares a variation of this Weight Watchers Core banana bread recipe. This recipe uses oatmeal, which is a great source of fiber.

Banana Bread

Ingredients:
2 cup oats
1 and 1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon nutmeg or pumpkin pie spice
1/2 teaspoon cinnamon
2 eggs
1 cup skim milk
1/2 cup unsweetened applesauce
2 ripe bananas, mashed
1/4 cup splenda

Mash bananas in a plate with splenda. Mix dry ingredients and then wet. Spray 8x8 dish with pam and pour in mixture. Bake at 350 for 40-50 minutes.

Very easy recipe. Took much longer than 40 mins tho. More like 1hr, 10 mins!

I like it. Of course, it's not as good as the full fat and real sugar recipe. But, it is a great substitute for that bread/cake craving when you are being careful of what you eat. It's a healthy alternative.

I baked in a muffin tin. I made 10 and baked about 25 minutes. I also added chips. It's good!
